Stepped in as interim F&B Director. Defined two outlet concepts from scratch. Built full SOP library and recruited a permanent F&B team.

Opened on time. First-month F&B NPS above 85. Property ranked in Top 10 new hotel openings by a national travel publication.

Approach

Unified the outlet portfolio under a single operating standard. Tightened menu engineering, supplier consolidation, and service choreography across all nine venues. Coached outlet managers as one leadership group rather than nine.

Result

Material lift in F&B profitability within two quarters. Guest satisfaction scores across dining rose significantly, with several outlets becoming repeat-visit drivers for returning guests.

Challenge

A flagship European property under a major global brand needed to lift its F&B star rating, modernise restaurant and in-room dining, and bring food cost under control without compromising the guest experience.

Approach

Led the F&B operation end to end. Redesigned the restaurant and room-service menus, repositioned the food offer, and upgraded the kitchen alongside a full cost-leak audit across purchasing, prep, and waste.

Result

F&B star rating improved at the next review cycle. Sustained reduction in food cost percentage while menu quality and presentation moved up a tier, delivered inside the brand's global standards.
